What does “stainless” mean?
The term or the declaration "stainless" means the object in question is made of high alloyed steel. Products manufactured using high alloyed steel have a high resistance to corrosion.
The terms "stainless" or "inox" is thus only partly true. If stainless steel products are not cleaned over a long period of time, aggressive substances (fruit acids, salt water etc.) are able to act on (corrode) the material.

How do I resharpen a Victorinox Kitchen Knife?
The kind of edge applied to a blade, determines the sharpness and durability of it. When using a sharpening steel, the angle should be between 30-40°.
When resharpening with a grinding wheel, plenty of water must be used to prevent overheating or even burning of the blade. Even when using a soft polishing wheel without water, overheating must also be avoided, because the structure is changed and the resistance to corrosion, hardness and edge retention is reduced.
More information can be found in instructions for re-grinding/re-sharpening of Victorinox Household and Professional Knife blades (PDF) -
